Cornstarch pancake batter |

Makes about 4 pancakes. Cooking time about 15 minutes
Ingredients
25ml olive oil
2 eggs
220ml cornstarch (e.g. Maizena)
120ml water (plus extra if needed)
Method
- Add the oil and eggs to a bowl and beat until frothy.
- Add the cornstarch and mix until there are no lumps in the batter.
- Add the water gradually until the batter is smooth and runs off a spoon quite easily.
Tip: Cornstarch acts as a thickening agent, so these pancakes are quite thick. Be sure to stir the batter each time with a whisk before you place some of it on the pan to make sure that the batter is of an equal consistency throughout.
