Chickpea mash

 

Serves 4, preparation time about 20min

Ingredients

4 medium boiled potatoes
2 cans chickpeas, rinsed and drained
1 heaped tsp wholegrain mustard
1 tbsp chopped chives or coriander
Water (as much as necessary to reach the desired consistency)
1 tbsp plain low fat yoghurt (optional)

Method

  • Mash the potatoes and chickpeas in a bowl.
  • Add some water if necessary
  • Mix in the mustard and herbs
  • If you eat yoghurt, add it to make the texture a bit more creamy

Tip: you can even add some nuts or seeds to this mash. Try something like linseeds which won't change the taste of the dish but are a great source of omega-3 fatty acids.
