Kleine Zalze Cellar Selection Cabernet Sauvignon Red Wine Bottle 750ml

The grapes for this wine came from carefully chosen plots of fruit from all throughout the coastal region of the Western Cape. The grapes were picked at optimal ripeness early in the morning and half is fermented in stainless steel tanks and the other half in open fermenters. Tannins were removed at the start of fermentation, and the wine was finished with moderate, short "pump overs" to avoid over-extraction. After fermentation, the wine was separated from the skins by gravity and malolactic fermentation took place in stainless steel tanks. The wine was matured for a year in French oak barrels.
