This wine's grapes were gathered at night. Why? Because there are distinct stages of maturity when it comes to grapes. Diemersdal allow their grapes and skins to come into contact in order for them to develop character. After that, the wine goes through an alcoholic fermentation process for three weeks at a temperature of 14-16 degrees.
