Iona Sauvignon Blanc White Wine Bottle 750ml

To keep the grapes cold, they were hand-picked and placed in crates early in the morning. The grapes are picked and vinified separately for each of the nine blocks. The must was settled after moderate pressing, keeping the temperature between 6 and 8 degrees Celsius. The wine was fermented at 14-16°C using a variety of commercial yeast strains that were specifically designed for Sauvignon Blanc. To increase the richness of the mid-palate, the wine was left on the gross lees for 5 months and constantly stirred.
