Ingredients

    FOR THE CHICKEN

  • 4 skinless & boneless chicken breasts
  • 2 tbsp. mayonnaise
  • 2 tbsp. olive oil
  • 1 cup sesame seeds (use a combination
    of black and white sesame seeds)
  • Salt and pepper

    FOR THE HERB DRESSING

  • ½ garlic clove, finely grated
  • ½ tsp. grated ginger
  • 2 tbsp. fresh parsley chopped
  • 2 tbsp. fresh coriander chopped
  • 1 tsp. Dijon mustard
  • 1 tbsp. Simple Truth raw honey
  • 4 tbsp. Simple Truth apple cider vinegar
  • ¼ cup olive oil
  • Salt and pepper

    FOR THE SALAD

  • 90 g mixed young spinach leaf salad
  • 200 g sugar snaps, blanched
  • 250 g asparagus, blanched
  • 200 g exotic tomato medley
  • ½ cucumber, cut into ribbons
  • 1 avocado, scooped with a teaspoon
  • 100 g Greek sheep’s milk feta cheese
  • 20 g Padkos dried cranberries

COOKING METHOD

Brush the mayonnaise all over the chicken to coat, then season with salt and pepper.

Sprinkle the sesame seeds over the chicken then press them down to ensure that the seeds stick.

Heat olive oil in a pan then sauté chicken until golden and cooked through.

Make the herb dressing by whisking together all the ingredients.

Mix the salad ingredients then drizzle enough dressing to coat and toss well.

Arrange onto serving plates and then slice the chicken and place it on top.

Serve any extra dressing on the side.
