Zola’s Frozen Coffee Chocolate Crunch Parfaits are made with Frey – Switzerland’s Number 1 chocolate – and are so easy to assemble!
For best results, freeze overnight before serving. Serves 2.
Line 2 tea cups with a double layer of cling wrap, making sure the edges overlap
Whisk together the cream cheese, condensed milk and espresso powder until smooth.
Stir in the melted chocolate, and then gently fold in the whipped cream.
Spoon half the mixture into the lined cups, then scatter on half the crushed cookies and chopped chocolate.
Spoon on the remaining chocolate mixture, then finish with a final sprinkle of cookies and chopped chocolate.
Fold the overhanging plastic wrap to cover, then place the cups into the freezer until completely frozen
(this can be done a few days in advance).
To serve, remove the frozen parfaits from the cups, place onto serving plates, then peel back the plastic to reveal.
