Only Greek olives are used in traditional Kalamata recipes. To imitate the rich flavour of authentic Kalamata Style, Mediterranean Delicacies obtains local olives that are hand-picked when ripe and cured using a traditional Kalamata technique at facilities in the Western Cape.
The Kalamata olive, named after the city of Kalamata in Greece's southern Peloponnese, is a huge black olive with a smooth, meaty texture. It's a common table olive that's commonly kept in brine. Plump, dark purple olives from a tree characterized by the size of its leaves compared to the common olive.
