An appetising, hard, salty white cheese made from goat's milk, this aged kefalotyri has a drier texture and stronger taste to every day cheese.
Kefalotyri is commonly used alongside feta cheese as the contrasting textures compliment each other well. It can be fried in olive oil, added to pastas, or grated over cooked vegetables. Kefalotyri takes a minimum of two months to mature.
