Get the best of both worlds with a T-bone steak. The fillet on one side of the bone is supremely tender, while the sirloin on the other is not quite as tender, but there's more flavour.
T-bone steak is a bit of a bonus. You can think of it as one big steak, which we usually do, but it's actually two smaller steaks. The big deal is that the T bone separates two of the finest cuts of beef - the fillet, which is renowned for its tenderness and the sirloin, which is not quite as tender but much tastier.
