• Description:

    One pan and ten minutes is all you need for this delicious flash-fried prawn with chorizo and white wine recipe. We promise, this one is a winner.

  • Ingredients:

    100 g chorizo; thinly sliced
    ¼ cup (60 ml) olive oil
    3–4 garlic cloves; peeled and crushed
    1 tsp. (5 ml) smoked paprika

    1 tbsp. (15 ml) thyme
    1 kg Cape Point prawns; cleaned, leaving tails intact
    ⅓ cup (80 ml) white wine

    ⅓ cup (80 ml) chopped coriander
    Lemon wedges; to serve

  • Method:

    1.    Heat a large non-stick frying pan over medium heat. Add the chorizo and cook, stirring occasionally, for 3–4 min. Use a slotted spoon to transfer the chorizo to a plate lined with paper towel.
    2.    Reduce heat to low. Add the oil, garlic, paprika and thyme to the pan and stir for a couple of seconds before adding the prawns. Cook for 1–2 min., add the wine and cook for another 2 min., stirring occasionally.
    3.    Return the chorizo to the pan, add the coriander and stir through. Serve immediately with lemon wedges.
