Clawson Blue Stilton,
Nectarine & Blueberry Salad

    Say no to bland with this Clawson Blue Stilton, Nectarine and Blueberry Salad. A decadent dish is what you’ll enjoy when you combine the rich blue Stilton with the sweet and tart flavours of the fruits.

  • Ingredients:

    For the dressing:
    ½ cup extra virgin olive oil
    4 tsp. red wine vinegar
    ½ tsp. Dijon mustard
    ⅓ cup blueberries
    Salt, freshly ground pepper

    4 cups mixed greens (such as rocket and baby gem lettuce)
    4 nectarines; halved, pitted & sliced

    250 g Clawson Blue Stilton; broken into chunky pieces
    ⅔ cup blueberries
    ½ cup pecan nuts

  • Method:

    Place all the ingredients for the dressing in a blender and blend till smooth.
    Run through a sieve to remove any pieces of blueberry that didn’t blend finely.
    Season dressing to taste with salt and pepper.
    Divide greens among plates.
    Scatter nectarines, cheese, blueberries and almonds over, dividing equally, and drizzle some of the dressing over.
    Season with salt and pepper.
