Banana Bread Recipe

Preheat the oven to 180°C and grease a 22 cm loose-bottomed cake tin with butter or non-stick spray.

Dust with flour. Cream the butter or margarine and sugar together, then add the eggs one by one, beating well after each addition.

Sift the flour, baking powder and salt together.

Dissolve the bicarbonate of soda in the water and mix with the mashed banana and milk.

Add to the creamed mixture, alternating with the dry ingredients.

Mix all the ingredients for the topping.

Turn the batter into the tin, spreading evenly.

Scatter with the topping mixture. Bake for 45 minutes or until risen and a testing skewer inserted into the centre comes out clean.
Ingredients
Loaf:
- 125 g butter or margarine
- 180 ml sugar
- 2 extra-large eggs
- 430 ml cake flour
- 10 ml baking powder
- 2 ml salt
- 4 ml bicarbonate of soda
- 15 ml water
- 250 ml mashed banana
- 15 ml milk
Topping:
- 30 ml brown sugar
- 7 ml ground cinnamon
- 60 ml walnuts; finely chopped
