Biscuit Topped Skillet Cookie

For the ultimate sweet treat on Braai Day, try this recipe for a biscuit topped skillet cookie

Directions

1.    Prepare coals to medium-low heat. 

2.    Cream butter and sugar together until pale and creamy. Add salt, vanilla, egg yolk and lemon rind and beat to combine. Sift in the flour and beat until smooth dough forms. 

3.    Cover and set aside in the fridge for an hour. Remove from fridge and set aside to soften slightly. 

4.    Spray a 25 cm cast iron skillet (with lid) with Spray 'n Cook or grease with butter. 

5.    Press the cookie dough into the skillet and place the lid on the skillet and into the centre of the braai. 

6.    Carefully place a few coals on the skillet lid, place the braai cover on the braai and bake for 15 minutes.

7.    Carefully remove the braai lid, then the coals from the skillet lid. Remove the pan from the braai and gently (while the dough is still soft) press the biscuits into the half-cooked cookie dough. 

8.    Return skillet to the braai, with skillet lid on, top with a couple of coals and place lid on the braai. Bake for another 10 minutes. 

9.    Carefully remove skillet from the braai and set aside to cool. 

10.    Serve with spoonfuls of ice cream.

•    ¾ cup (165 g) castor sugar

•    Pinch of salt

•    2 tsp. (10 ml) vanilla extract

•    1 egg yolk

•    1 tbsp. (15 ml) lemon; grated

•    2 cups (500 ml) flour

•    6 iced Zoo Biscuits

•    6 jam biscuits
