Cheesy Potato Soup With German Sausages

Description
This hearty cheesy soup recipe is made with all our favourite German things: beer, sausages and sharp Emmentaler.
Directions
1. Heat oil in a medium pot and fry onions, carrots, mushrooms, potatoes, thyme and sausage for about 5 min. or until golden.
2. Add the cornflour and stir to form a paste.
3. Pour in the beer and cook for 2 min.
4. Add the stock and cream and stir slowly for 5 min., until soup boils and thickens.
5. Remove soup from heat and stir through grated cheese.
6. Season soup with salt and pepper to taste.

- 2 tbsp. (30 ml) olive oil
- 1 onion; peeled and thinly sliced
- 1 carrot; peeled and grated
- 1 punnet button mushrooms; sliced
- 1 large potato; peeled and chopped
- 4 thyme sprigs; leaves only
- 2 Bockwurst sausages; sliced
- 1 cup (250 ml) lager
- ¼ cup (60 ml) cornflour
- 1 L chicken stock
- 1 cup (250 ml) cream
- 1 cup (250 ml) grated Emborg Emmentaler
- Salt and freshly ground black pepper
