Chicken Frikkadels with Fresh Pineapple Salsa
Description
Learn how to create these miniature oriental spiced chicken meatballs with a spicy pineapple salsa.
Directions
1. Place the chicken, lime zest, ginger, garlic and spring onions into a food processor and whiz until just combined.
2. Place the mixture into a bowl and add the soy sauce, honey, egg, breadcrumbs and chopped coriander.
3. Season with salt and freshly ground pepper and mix until well combined.
4. Shape into bite-size patties and refrigerate for a couple of hours to firm up.
5. Heat a little oil in a frying pan and fry frikkadels for about 2 min. on each side or until golden brown and cooked through.
6. Remove from pan and place onto a serving platter.
7. Drizzle with a little sweet soy sauce and top with some pineapple salsa. Serve immediately.
To make the pineapple salsa:
1. Combine all ingredients in a small bowl and season with salt and pepper.
2. Serve with the chicken frikkadels.
Ingredients
• 500 g deboned chicken thighs; cubed
• Zest of 1 lime
• 1 small piece of ginger; grated
• 1 clove garlic; crushed
• 3 spring onions; roughly chopped
• 1 tbsp. (15 ml) soy sauce
• 1 tbsp. (15 ml) honey
• 1 egg
• 1 cup (250 ml) fresh breadcrumbs
• Small handful fresh coriander; roughly chopped
• Salt and freshly ground pepper
• Sweet soy sauce; for serving
• Vegetable oil; for frying
For the pineapple salsa:
• 1 small red onion; finely sliced
• 1 small pineapple; finely diced
• 1 red chilli; finely sliced
• ½ cucumber; finely diced
• Juice of 1 lime
• 1 tbsp. (15 ml) olive oil
• Salt and freshly ground pepper
