Description

Say no to bland with this Clawson Blue Stilton, Nectarine and Blueberry Salad. A decadent dish is what you’ll enjoy when you combine the rich blue Stilton with the sweet and tart flavours of the fruits.

Directions

1. Place all the ingredients for the dressing in a blender and blend until smooth.


2. Run through a sieve to remove any pieces of blueberry that didn’t blend finely.


3. Season dressing to taste with salt and pepper.


4. Divide greens among plates.


5. Scatter nectarines, cheese, blueberries and nuts over, dividing equally and drizzle some of the dressing over.


6. Season with salt and pepper.
 

Ingredients

  • 4 cups Mixed greens (such as rocket and baby gem lettuce)
  • 4 Nectarines; halved, pitted & sliced
  • 250 g Clawson Blue Stilton; broken into chunky pieces
  • ⅔ cup (166ml) Blueberries
  • ½ cup (125ml) Pecan nuts


For the dressing:

 

  • ½ cup (125ml) Extra virgin olive oil
  • 4 tsp. Red wine vinegar
  • ½ tsp. (2.5ml) Dijon mustard
  • ⅓ cup (83ml) Blueberries
  • Salt & freshly ground pepper
