Crunchy Creamy Chickpea Sandwich (Vegan)

Description

This combination of chickpeas and wholegrain bread makes for a delicious, protein-packed sandwich like no other. It’s crunchy, creamy and a great choice for vegans.

Directions

1. Place red onion in a bowl with a squeeze of lemon and set aside.

2. Place drained chickpeas in a bowl and add mayonnaise, yoghurt, squeeze of lemon, capers, celery and spring onions. Season and mash with a fork.

3. Stir through dill and gherkin and adjust seasoning.

4. Spoon onto toasted wholegrain bread and top with lettuce, sliced tomato, creamy mashed chickpeas and a little pickled red onion before serving.

 

Ingredients

  • 1 red onion; finely sliced
  • 1 can chickpeas; drained
  • ¼ cup (80 ml) Simple Truth Mayonnaise
  • Squeeze of lemon
  • Salt and milled pepper
  • 2 tsp. (10 ml) capers; chopped
  • 1 stick of celery; finely sliced
  • 1 – 2 spring onions; finely sliced
  • 2 tbsp. (30 ml) dill; chopped
  • 1 large gherkin; finely chopped
  • 4 slices wholegrain bread; toasted
  • Lettuce
  • Tomato


To serve:

  • Pickled red onion
