Description
This combination of chickpeas and wholegrain bread makes for a delicious, protein-packed sandwich like no other. It’s crunchy, creamy and a great choice for vegans.
Directions
1. Place red onion in a bowl with a squeeze of lemon and set aside.
2. Place drained chickpeas in a bowl and add mayonnaise, yoghurt, squeeze of lemon, capers, celery and spring onions. Season and mash with a fork.
3. Stir through dill and gherkin and adjust seasoning.
4. Spoon onto toasted wholegrain bread and top with lettuce, sliced tomato, creamy mashed chickpeas and a little pickled red onion before serving.

- 1 red onion; finely sliced
- 1 can chickpeas; drained
- ¼ cup (80 ml) Simple Truth Mayonnaise
- Squeeze of lemon
- Salt and milled pepper
- 2 tsp. (10 ml) capers; chopped
- 1 stick of celery; finely sliced
- 1 – 2 spring onions; finely sliced
- 2 tbsp. (30 ml) dill; chopped
- 1 large gherkin; finely chopped
- 4 slices wholegrain bread; toasted
- Lettuce
- Tomato
To serve:
- Pickled red onion
