Crunchy Vegetable, Potato, Hummus & Pesto Salad

Description

A healthy and delicious veggie salad with plenty of crunch and plenty of goodness. The best part? It’s oh-so-simple to make and even easier to enjoy.

Directions

1. Boil Carisma potatoes until cooked through, drain and set aside.

2. Heat olive oil in a non-stick pan and sauté sugar snap peas, broccoli, green beans, asparagus and garlic for 3 – 5 minutes until cooked through. Season with milled pepper and lemon.

3. Slice potatoes, add olive oil to a pan and grill until crisp. Grill brinjals until golden and cooked through on both sides.

4. Serve vegetables plated with hummus, pesto and topped with crumbled seed crackers and fresh basil.

Ingredients

  • 4 - 6 Low GI Carisma potatoes
  • 2 tbsp. (30 ml) olive oil
  • 1 packet sugar snap peas
  • 1 packet purple broccoli
  • 1 packet green beans
  • 1 packet asparagus
  • 2 garlic cloves; crushed
  • 1 brinjal; sliced and seasoned with pepper and olive oil


To serve:

  • 1 tub hummus
  • Basil pesto
  • 6-8 Simple Truth Seed Crackers
  • Basil
