Description

For a snack that’s better for your body and your microbiome, whip up a batch of these dates and cranberries smothered in oats, nuts and cacao powder by famous SA cook, Sarah Graham. No baking needed.

Directions

1. Soak dates and cranberries in hot water for 1 minute, then drain well.

2. While the fruit soaks, add the oats, nuts, cacao, sea salt flakes and cinnamon to your food processor. Pulse until roughly chopped. Add in your dates and cranberries and continue to pulse until everything is well mixed. (Scrape down the insides of the mixer using a spatula from time to time, if you feel it’s necessary).

3.Divide into portions and roll gently, then store in a glass jar in the fridge for up to 1 week. 

Ingredients

  • 15 g raw cacao powder
  • 85 g dried pitted dates
  • 50 g dried cranberries or raisins (added fruit sugar only, no preservatives)
  • 75 g rolled oats (gluten free, preferably organic)
  • 50 g raw almonds (or nuts of your choice)
  • ½ tsp. sea salt flakes
  • 1 level tsp. cinnamon
  •  20 g coconut oil
  • 2 level tbsp. chia seeds or flax seeds
  •  Extra cacao, to dust (or roll in unsweetened desiccated coconut)
