Fruity Rainbow Popsicles

Description

This healthy little treat is sure to give you cravings all summer long. It’s a feast for the eyes and features our Simple Truth Berry Fruit Juice made with no added preservatives and has spinach hidden so well, the kids will never know.

Directions

To make the first layer:
1. Pour all ingredients into a blender and blend until smooth.

2. Pour mixture ⅓ of the way into each popsicle mould and freeze for a couple of hours or until frozen solid.


To make the second layer:
1. Place all ingredients except chia seeds into a blender and blend until smooth.

2. Stir in chia seeds and pour over the 1 frozen layer, up to ⅔ of the popsicle mould. Freeze for a couple of hours again until frozen solid.


To make the third layer:
1. Place all ingredients into a blender and blend until smooth.

2. Pour the final layer onto the frozen popsicles and freeze again until frozen solid.

3. Serve once the final layer has frozen.

Ingredients

Layer 1:

  • 1 cup (250 ml) blueberries
  • 1 cup (250 ml) blackberries
  • 1 cup (250 ml) Simple Truth Berry Fruit Juice
  • Honey, to taste (if needed)


Layer 2:

  • 1 small pineapple; peeled and roughly chopped
  • 1 mango; peeled and roughly chopped
  • Zest and juice of 1 lime
  • Splash of water
  • 1 tbsp. (15 ml) chia seeds


Layer 3:

  • 1 small pineapple; peeled and roughly chopped
  • 2 handfuls of baby spinach; washed
  • Zest and lime of 1 lemon
  • 2 tbsp. (30 ml) honey
