Gluten-free Butternut & Beetroot Pizza

Description

It’s tasty, it’s got character and it’s gluten free! This pizza recipe is the guilt-free choice with plenty of vitamins and minerals from butternut and beetroot.

Directions

1. Preheat oven to 180 °C.

2. Toss butternut, half the harissa paste, lemon juice and olive oil together. Place on a roasting tin and roast until cooked through and golden for about 15 – 20 minutes.

3. Mix remaining harissa and pasta sauce together, season and set aside.

4. Spoon harissa pasta sauce over the pizza base and arrange butternut, beetroot and grated cheese on the pizza bases. Bake according to packet instructions.

5. Serve topped with sliced avocado and rocket.


 

Ingredients

  • 1 butternut; peeled and chopped or 1 packet cubed butternut
  • ⅓ cup (80 ml) harissa
  • Juice of 1 lemon
  • 2 tbsp. (30 ml) olive oil
  • 1 cup (250 ml) ready-made pasta sauce
  • 1 packet Cape Malay spiced beetroot
  • 1 block Simple Truth Lactose-free Cheese; grated


To serve:

  • 1-2 avocadoes; peeled and sliced
  • Rocket
