Ostrich with Fresh Mango Blatjang

Description

Intensify the flavours of our 100% South African ostrich by cooking it over the coals with a fresh mango blatjang.

Directions

1.    Toast coriander and cumin seeds in a dry pan. Remove from the heat and crush in a pestle and mortar. Place ground spices in a bowl with onion, radishes and red wine vinegar. Set aside for 5-10 minutes, until gently pickled. 

2.    Stir mango, chilli and fresh coriander through pickled onion mixture. 

3.    Drizzle olive oil over ostrich, sweet potato and asparagus and dust with Simple Truth BBQ Rub. Toss to combine.

4.    Place potato, ostrich and asparagus over hot coals until cooked through to your desired liking. Set aside.

5.    Remove ostrich and vegetables from braai, and set aside. Squeeze over the citrus, an extra drizzle of olive oil, adjust seasoning and serve with spoonfuls of fresh mango blatjang. "

Ingredients

For the Fresh Mango Blatjang

•        1 tbsp. (15 ml) coriander seeds

•        2 tsp. (10 ml) cumin seeds

•        1 red onion; finely sliced 

•        5-6 radishes; finely sliced

•        2 tbsp. (30 ml) red wine vinegar

•        2 mangoes; peeled and chopped 

•        1 chilli; deseeded and finely chopped

•        3 tbsp. (45 ml) coriander; chopped

•        600 g - 800 g, The Ostrich Co. Ladies'

Rump
•        2-3 sweet potatoes; parboiled and thickly sliced

•        1 packet asparagus; washed and trimmed

•        3 tbsp. (45 ml) olive oil

•        3-4 tbsp. (45 ml - 60 ml) Simple Truth Sweet & Spicy BBQ Rub 

•        Juice of 1 lemon
