Simple Truth BBQ Spice-rubbed Chicken with Sides

Description

Who doesn’t love a good chicken recipe? This barbeque spice-rubbed chicken is the better-for-you choice, with sides of cauli-rice, spicy pineapple salad and tahini dressing. The perfect healthy dinner delight.

Directions

1. Rub chicken with spice rub, lemon juice and peel half the crushed garlic.

2. Preheat oven to 180 °C, place chicken on a baking tray and bake until cooked through for about 15 – 20 minutes.

3. Heat olive oil in a non-stick pan. Add ⅔ of the spring onions, chilli and remaining garlic and quickly fry cauli-rice until golden.

4. Mix chopped chilli, remaining spring onions and coriander together with pineapple.

5. Whisk tahini dressing ingredients together; if too thick, add a little water to thin to desired consistency.

6. Serve chicken with cauli-rice and chopped pineapple relish drizzled with tahini dressing.


 

Ingredients

  • 3 – 4 chicken breasts
  • 3 tbsp. (45 ml) Simple Truth BBQ Spice Rub
  • Juice and grated peel of 1 lemon
  • 2 – 3 garlic cloves; crushed
  • 1 bunch spring onion; finely sliced
  • 2 tbsp. (30 ml) olive oil
  • 1 chilli; finely chopped
  • 1 packet cauli-rice
  • ¼ pineapple; peeled and diced into chunks or 1 tub pre-cut pineapple
  • Chilli


Tahini dressing:

  • ¼ cup (60 ml) olive oil
  • ¼ cup (60 ml) tahini
  • Juice of ¼ lemon
  • 1 tbsp. (15 ml) Dijon mustard
  • 1 tsp. (5 ml) honey
  • Milled pepper
