Simple Truth Mexican Bowl Served with Crispy Avocado Wedges

Description

This lunchtime recipe combines the incredible health benefits of avocado with our Simple Truth Mexican Bowl. Together they make for a meal packed with flavour, colour and nutrients.

Directions

1. Peel and slice avocado into sixths.

2. Add cumin, garlic powder and salt and pepper to flour and place in a bowl.

3. Coat avocado in flour then dunk in whisked egg and coat in breadcrumbs.

4. Spray avocado with Simple Truth Coconut Spray and bake at 200 °C until golden and crisp.

5. Mix yoghurt, coriander, cumin, lime juice and seasoning together.

6. Heat Simple Truth Mexican Bowls according to packet instructions and serve with crisp avocado, a spoonful of yoghurt dressing, sliced cucumber, chopped chilli and an extra couple of lime wedges.

  • 3 Simple Truth Mexican Bowls
  • 2 avocados
  • 1 egg
  • 2 tsp. (10 ml) ground cumin
  • 2 tsp. (10 ml) garlic powder
  • ½ cup (125 ml) flour
  • 1 cup (250 ml) breadcrumbs
  • Simple Truth Coconut Spray


To serve:

  • 1 cup (250 ml) yoghurt
  • ¼ cup (60 ml) coriander
  • 2 tsp. (10 ml) ground cumin
  • Juice of 2 limes
  • ½ cucumber; sliced
  • 1 chilli; finely chopped
