Description
This warm, hearty recipe combines a winning combination of flavours and textures which make it the perfect sit-down meal. With the use of our Simple Truth Potato & Pea Curry with Garlic Naan Bowls, it’s safe to say it will be a hit at any dinner table.
Directions
1. Heat oil in a non-stick pan. Add onion, curry powder, garlic and ginger and sauté until soft and fragrant.
2. Stir-fry kale and mini corn until cooked through, for about 5 – 8 minutes. Add a squeeze of lemon and set aside.
3. Mix chopped tomato, remaining onion, chilli and coriander and set aside.
4. Heat Simple Truth Potato & Pea Curry with Garlic Naan Bowls according to packet instructions.
5. Divide meals and serve with curried kale, corn and tomato sambal.
Ingredients
- 3 Simple Truth Potato & Pea Curry with Garlic Naan Bowls
- 1 tbsp. (15 ml) olive oil
- 1 onion; finely chopped (set half aside for sambal)
- 1 tbsp. (15 ml) curry powder
- 2 tsp. (10 ml) crushed garlic
- 2 tsp. (10 ml) crushed ginger
- 1 bunch kale; ribs removed and finely sliced
- 1 packet mini corn
- Juice of 1 lemon
Sambal:
- 1 punnet cherry tomatoes; finely chopped
- 1 onion; finely chopped
- 1 chilli; finely chopped
- ⅓ cup coriander; chopped
