Description

Use our Simple Truth Roast Veggie Bowl as a base to create a quick and easy, nutritious vegan lunchtime treat. The addition of chickpeas makes this recipe a great source of protein.

Directions

1. Toss drained chickpeas with cumin, thyme, olive oil and seasoning and pan-fry until crisp for about 8 – 10 minutes.

2. Pan-fry vegetarian patties until crisp and heated through, and then slice each patty into thirds.

3. Heat Simple Truth Roasted Veggie Bowls according to packet instructions and serve with a handful of baby spinach, crispy chickpeas, Simple Truth Vegetarian Patties, a spoonful of tomato pesto and finely sliced red onion.

  • 3 handfuls baby spinach
  • 1 can chickpeas; drained
  • 2 tsp. (10 ml) cumin
  • 1 tbsp. (15 ml) thyme; chopped
  • 1 tbsp. (15 ml) olive oil
  • Salt and milled pepper
  • 4 Simple Truth Vegetarian Patties


To serve:

  • Sundried tomato pesto
  • ½ red onion; finely sliced
