Spicy Braaied Watermelon & Aubergine Skewers with Mint Dressing

Look what you can do with watermelon; give your body a yummy dose of this juicy dessert that’s bursting with flavour.

Directions

1. Prepare your coals to medium high heat. Soak bamboo skewers in water for about 20 minutes, this prevents wood from burning or opt for metal skewers.

2. Brush aubergine slices with smoky BBQ sauce, olive oil and seasoning. Place on the grid and braai for 4 – 5 minutes a side or until cooked through. Set aside to cool and dice into squares.

3. Insert and alternate cubed watermelon, aubergine and a basil leaf onto each skewer. Brush skewers with extra smoky BBQ sauce and scatter with sweet and spicy rub.

4. Mix chopped mint, basil, chilli, red onion and oil together, season and set aside.

5. Place on the braai grid for about one minute to heat through, plate and serve dressed with mint sauce, chopped pistachios, radish and extra herbs. Serve and enjoy!
 

Ingredients

  • 10 – 12 skewers
  • 3 aubergines; thickly sliced
  • ⅓ cup (80 ml) Simple Truth Smokey BBQ Sauce
  • 2 tbsp. (30 ml) olive oil
  • 4 cups cubed watermelon
  • ¼ cup (60 ml) Simple Truth Sweet & Spicy Rub
  • 6 – 8 radishes; finely sliced
  • ¼ cup (60 ml) pistachios; shell removed and chopped


Spicy mint dressing:

  • ½ cup (125 ml) mint; washed and finely chopped
  • ½ cup (125 ml) basil leaves; washed and finely chopped
  • 1 chilli, seeds removed; finely chopped
  • ½ small red onion; finely chopped
  • 2 tbsp. (30 ml) coconut or olive oil
