Spinach Choc-Chip Muffins

Description

Every school lunchbox should have a tasty surprise waiting for an energetic little student, and these Spinach Choc-Chip Muffins will do the trick.

Directions

1. Blend the spinach, canola oil and bananas together until smooth.

2. Add the eggs and the almond milk and blend again.

3. Mix together the flour, baking powder, brown sugar and cocoa powder.

4. Add the smoothie mixture to the dry ingredients.

5. Combine well then stir in half of the chocolate chips.

6. Pour into a silicone muffin tray and top with the rest of the chocolate chips.

7. Bake in a preheated oven of 180° C for 12 – 15 minutes.

  • 2 cups baby spinach
  • ¼ cup Canola oil
  • 2 ripe bananas
  • ½ cup brown sugar
  • 2 large eggs 
  • 1 ½ cups gluten-free flour
  • 1 tsp. baking powder
  • 1 cup chocolate chips
  • 3 ¼ cups Simple Truth Almond Milk
  • ¼ cup Cocoa Powder
