Sweet Potato Noodles with Veggies & Spicy Walnuts

Description

A healthier version of those much-loved noodles with the addition of scrumptious stir-fried veggies and crushed walnuts. Easy to make and even easier to enjoy!

Directions

1. Cook Simple Truth Sweet Potato Noodles according to packet instructions, drain and set aside.

2. Heat oil in a non-stick pan and fry spring onions, garlic, chilli and walnuts until soft.

3. Add patty pans, mushrooms and baby marrows until golden. Season.

4. Serve tossed-through noodles with tomato pesto, handful basil and extra walnuts.

Ingredients

  • 1 packet (200 g) Simple Truth Purple Sweet Potato Noodles
  • 2 tbsp. (30 ml) olive oil
  • 1 bunch spring onions; finely chopped
  • 2 tsp. (10 ml) crushed garlic
  • 1 tsp. (5 ml) chilli flakes
  • 1 packet (100 g) walnuts
  • 1 punnet patty pans; sliced
  • 1 punnet baby mushrooms; chopped
  • 1 punnet baby marrows in ribbons
  • Salt and milled pepper


To serve:

  • Sundried tomato pesto
  • Basil
  • Extra walnuts
