Vegan Bobotie-spiced Mushrooms on Toast

Description

Take your morning toast to a whole new level with the immune-boosting benefits of mushrooms. These Bobotie-spiced Mushrooms on toast are also a great breakfast idea for vegans.

Directions

1. Heat oil in a non-stick pan, fry onion and spices until fragrant and soft.

2. Season with salt and pepper, and then stir through lemon juice and chutney.

3. Add mushrooms and fry until cooked through.

4. Spoon spiced mushrooms on toast and serve with a dollop of chutney, sliced avocado, tomato and onion sambal and chopped coriander.
 

Ingredients

  • 2 tbsp. (30 ml) olive oil
  • 1 onion; finely chopped
  • 1 garlic clove; finely chopped
  • ½ tsp. (3 ml) cayenne pepper
  • ½ tsp. (3 ml) cinnamon
  • 1 tsp. (5 ml) turmeric
  • 1 tsp. (5 ml) mild curry powder
  • 1 bay leaf
  • Salt and milled pepper
  • 2 tbsp. (30 ml) lemon juice
  • 1 tbsp. (15 ml) Simple Truth Fruit Chutney
  • 1 punnet (400 g) mixed mushrooms; chopped
  • 4 slices wholegrain bread or rolls; toasted


To serve:

  • Chopped tomato and onion sambal, avocado, coriander and chutney
