The Vegan Rooibos & Hoodia Almond Frosted Tea Cake

Description

This easy Vegan Rooibos & Hoodia Almond Frosted Tea Cake recipe is bound to be a hit with all your loved ones – because it’s plant-based and lactose free! The sponge cake and syrup are made from superfood Rooibos, the key ingredient in our exclusive Cooper & Flyn Rooibos & Hoodia Tea, while the frosting is made using dairy-free Simple Truth Unsweetened Almond Milk.

Directions

1.Preheat the oven to 180 °C.

2.Grease the base and sides of your bundt cake tin very well.

3. Sift the flour, baking soda and sugar into a large mixing bowl.

4. In another bowl whisk the almond milk, Rooibos tea, sunflower oil, maple syrup and vanilla essence.

5. Pour the mixture into the dry ingredients, then whisk together using a hand-blender for 2 minutes until thick and creamy.

6. Spoon the mixture into your prepared cake tin and bake for 35 minutes.

7. Remove from the oven and leave to cool on a wire rack.

8. To make the Rooibos Syrup, heat Rooibos tea and sugar in a saucepan. Allow it to cook for about ten minutes until it becomes a dark syrup.

9. To make the frosting, whisk together the icing sugar and almond milk for a thick frosting consistency.

10. Once the cake has cooled, place it onto a plate and drizzle the Rooibos syrup over the top of the cake allowing the cake to absorb all the delicious flavour.  

11.Spoon over the frosting allowing to run down the sides. Sprinkle with toasted almonds and leaves of fresh thyme.

Ingredients

For the Sponge Cake:

  • 300 ml (2 tea bags in 200 ml) Cooper & Flyn Rooibos & Hoodia Tea; cooled
  • 100 ml Simple Truth Unsweetened Almond Milk
  • 400 g self-raising flour
  • 1 tsp. baking soda
  • 250 g castor sugar
  • 100 ml sunflower oil
  • 4 tbsp. maple syrup
  • 2 tsp. vanilla essence

 

For the Rooibos Syrup:

  • 125 ml Cooper & Flyn Rooibos & Hoodia Tea (1 tea bag in 125 ml)
  • 125 ml sugar

 

For the Frosting:

  • 60 ml Simple Truth Unsweetened Almond Milk
  • 125 ml icing sugar
  • Almonds; toasted 
  • Thyme (Checkers Living Herbs)
