Description
These Vegan Strawberry Popsicles are the perfect snack or dessert for the whole family. With unbelievable flavour and just a few ingredients these popsicles are sure to be your new go-to.
Directions
1. Cut the stems off the strawberries and place into a blender.
2. Pour in maple syrup, almond milk, coconut milk and add a pinch of salt.
3. Blend until smooth, then add in chia seeds and shredded toasted coconut.
4. Pour mixture into popsicle moulds and freeze for 6 – 8 hours or until frozen solid.
5. Once ready to serve, remove popsicles from mould and spread a thin layer of melted coconut oil onto the end of each popsicle and dip in toasted coconut flakes.
Ingredients
- 400 g strawberries; rinsed
- 2 tbsp. (30 ml) maple syrup
- 1 cup (250 ml) Simple Truth Almond Milk
- 1 cup (250 ml) Pot O’ Gold Coconut Milk
- Pinch of salt
- 2 tbsp. (30 ml) chia seeds
- 3 tbsp. (45 ml) shredded coconut; toasted
- 1 tbsp. (15 ml) Simple Truth Coconut Oil for garnish
- ¼ cup (60 ml) Padkos Raw Coconut Flakes; toasted for garnish
