Directions

1. Place the eggs, sugar, vanilla essence and coconut oil in a bowl and beat with an electric mixer until light and fluffy.

2. Sift together the flour, bicarbonate of soda, salt and cinnamon, and combine with the egg mixture and almond milk.

3. Stir in the oats, crushed wholewheat flakes, raisins and apples and allow the mixture to stand for at least 1 hour, or overnight in the refrigerator.

4. Spoon the mixture into a silicone muffin tray and sprinkle a little extra oats on top.

5. Bake in a pre-heated oven at 180ºC for about 25 minutes or until risen, golden brown and cooked through.

 

Tip: This mixture keeps well in the fridge for up to 30 days. Simply store it in an air-tight container and bake when needed.

  • Pinch of salt
  • 1 tsp. (5ml) ground cinnamon
  • 2 cups (500ml) Simple Truth Unsweetened Almond Milk
  • 11/3 cup (330ml) Simple Truth Gluten Free Wholegrain Instant Oats
  • 1 cup (250ml) Simple Truth Reduced Sugar Crushed Wholewheat Flakes
  • 2/3 cup (160ml) raisins
  • 3 apples; peeled, cored and cubed
