Directions

1. Preheat oven to 180°C.

2. In a large bowl, mix cream, milk, garlic, 1 cup cheddar (save the rest for topping), Parmesan, nutmeg and thyme and season with salt. Taste mix for seasoning and adjust by adding salt accordingly.

3. Wash and dice potatoes, then mix into the cream mixture. Transfer into a baking dish, cover with foil, then bake for 45 minutes.

4. Uncover, sprinkle with remaining cheddar and bake for another 30 minutes until potatoes are tender and the top is brown and bubbling.

  • 250ml milk
  • 4 tbsp. crushed garlic
  • 1½ cups cheddar cheese; grated
  • 1 cup Parmesan cheese; grated
  • 1½ tsp. nutmeg
  • 2 tbsp. fresh thyme; chopped
  • Salt, to taste
  • 1.5kg potatoes
