Directions

1. Season pork with salt and pepper. Heat oil in a pot, then brown the pork pieces until golden on all sides.

2. Add Cajun spice, smoked paprika and garlic & ginger paste then stir and cook for a minute. Add chopped vegetables, cover, and allow to sauté gently until veggies begin to soften.

3. Add tomatoes, sugar and stock, cover, and simmer for 45 minutes. Add rice, then simmer for another 30 minutes or until rice is tender. Season to taste, stir in the sliced cabbage, then simmer for another 15 minutes or until the cabbage is tender.

  • 1kg stewing pork

  • 2 tbsp. smoked paprika
  • 2 tbsp. garlic & ginger paste
  • 1 onion; peeled & chopped
  • 2 carrots; peeled & chopped
  • 1 celery stick; peeled & chopped
  • 1 tin chopped tomato
  • 2 tsp. sugar
  • 3 cups stock
  • 1 cup washed rice
  • 2 cups sliced cabbage
