Directions

1. Place the watermelon cubes on your plate or platter, then top with coriander, chilli, peanuts and lightly toasted mixed seeds.

2. For the Dressing: Combine all the ingredients in a saucepan and gently simmer for a few minutes until the sauce slightly thickens. Remove from heat and let it cool.

3. Drizzle the dressing over the watermelon salad and serve immediately to enjoy the blend of flavours and textures.

Ingredients

For the Watermelon:

  • ¼ watermelon; cut into bite-sized cubes (preferably seedless)
  • Large handful of fresh coriander; roughly chopped
  • 1 jalapeño chilli; deseeded and finely sliced
  • 50g Padkos Roasted & Salted Peanuts; roughly chopped
  • 1 tbsp. (15ml) mixed seeds; lightly toasted

 

For the Dressing:

  • Juice of 3 limes and zest of 1
  • 2 tbsp. (30ml) Simple Truth Organic Coconut Sugar
  • Piece of ginger; finely chopped
