Directions

1. In a pot, bring the vegetable stock to a boil then sprinkle in the polenta while whisking until thickened. Turn to a low heat and cook for 15 minutes, stirring occasionally.

2. In a pan, heat olive oil then add courgettes, cut side down and sauté until browned. Turn courgettes over, add tomatoes to the pan, season with salt and pepper and allow to sauté for a few minutes for the tomatoes to blister.

3. Add coconut milk and pesto, simmer for 5 minutes.

4. Season the polenta to taste before serving topped with the saucy veg. Serve immediately.

  • 200g courgettes; halved lengthways
  • 200g cherry tomatoes
  • Salt and pepper, to taste
  • 1 cup coconut milk
  • 2 tbsp. basil pesto
