Description

Now this is healthy, fast food. You’ll have dinner on the table in 15 minutes thanks to this decadent recipe featuring our Simple Truth Turmeric Noodles.

Directions

1. Cook noodles according to packet instructions.

2. Place avocado, water, coconut milk, lemon juice, zest, spring onions, garlic and ½ of the Parmesan cheese into a blender. Blend until smooth and creamy then season with salt and pepper.

3. Pour sauce over hot noodles and gently toss together.

4. Divide pasta between plates and top with the extra grated Parmesan cheese and some micro herbs for garnish.

  • 1 pack Simple Truth Turmeric Noodles
  • 4 large ripe avocados; peeled and pip removed
  • 1 tin (410 ml) Pot O’ Gold Coconut Milk
  • ½ cup (125 ml) water
  • 4 tbsp. (60 ml) lemon juice
  • Zest of 1 lemon
  • 2 spring onions; chopped
  • ½ garlic clove; chopped
  • 80 g Parmesan cheese; grated
  • Salt and pepper, to taste
  • Micro herbs, for garnish
