Air Fryer Lactose Free Cheese and Herb Scones by Zola Nene

Directions

1.Place air fryer on “bake” setting on 180 °C and set the timer for 20 minutes.

2.Sift together flour and baking powder, then rub in the cold butter until mixture resembles breadcrumbs.

3.Stir in the cheese and herbs.

4.Whisk together the eggs and yoghurt.

5. Pour half the wet ingredients into the dry mixture, then fold gently with a palette knife (or butter knife), add more wet ingredients, a little at a time, while continuing to mix gently, until the mixture comes together to form a dough. Use your hands to gently knead and bring the dough together.

6. Lay dough onto a floured surface, flatten out to about 2 cm thickness, then cut into scones using a floured cutter.

7. Gather any remaining dough, knead together, flatten and continue to cut scones.

8. Place scones into the air fryer basket, brush the tops with any remaining egg mixture or with some extra yoghurt and sprinkle with cheese.

9. Cook for 15 – 20 minutes or until the scones are golden and cooked through. 

Tip: freeze raw scones to store and cook in the air fryer from frozen when needed.

●    2 cups of cake flour
●    2 tsp. baking powder
●    60 g cold margarine (plus extra for topping)
●    1 cup of grated Simple Truth Lactose Free Cheese (plus extra for topping)
●    2 large Simple Truth Free-Range eggs
●    120 ml Simple Truth Lactose Free Yoghurt
●    3 tbsp. fresh herbs; chopped
