Directions

1. Cut the short rib roast into single ribs by cutting in between. You should be left with 3 chunky pieces of rib.

2. Heat the oil in a large pan and brown the short ribs all over.

3. Put the short ribs and the rest of the ingredients into the pressure cooker.

4. Follow the manual instructions and seal well.

5. Set the cooking time to 50 minutes.

6.  Cook, let the steam release and open carefully. Never force a pressure cooker open – if it doesn't want to open it’s not ready yet.

7. Check that the ribs are tender. If not, put on another 15-minute cooking cycle.

8. Remove the ribs, carefully pour the cooking liquid into a pan and leave to reduce until its thick enough to coat the ribs.

9. Coat the short ribs in the sticky sauce.

10. Serve on a bed of sticky rice or mashed potato with fresh coriander, sugar peas and chopped spring onion.

Ingredients

  • 1 short rib roast
  • 1 tsp. salt and pepper
  • Olive oil

 

For the Sauce:

  • 3 tbsp. soy sauce
  • ¼ cup dry sherry/mirin or beef stock
  • ¼ cup honey
  • 1 thumb-size piece of ginger; peeled and finely grated
  • 4 garlic cloves; peeled
  • 1 tsp. sesame oil

 

To Serve:

  • Squeeze of lime
  • Sticky rice/mashed potato
  • Steamed sugar snap peas
  • Sliced spring onion
  • Fresh coriander
