Directions

1. Heat a pot, add olive oil and bacon then fry until bacon is golden.

2. Remove bacon from the pot and set aside. In the same pot, add the butter and the Potato & Leek Soup Mix, then sauté for a few minutes in the bacon fat.

3. Add vegetable stock and cream then simmer gently for 20 minutes. 

4.Using a potato masher, mash the veggies lightly in the soup; this will help thicken the soup slightly. 

5. Stir in the bacon, and season with salt and pepper to taste. Serves 4.

  • 1 x 600g Potato & Leek Soup Mix
  • 125g Farmstead Cured & Smokey Streaky Bacon; chopped
  • 1 tbsp. olive oil
  • 2 tbsp. butter
  • 2.5 cups vegetable stock 
  • 1 cup fresh cream
  • Salt and pepper; to taste
