Directions

1. Mix the yoghurt, vanilla and honey together until well combined.

2. Line a baking tray with baking paper and pour the yoghurt onto it, spreading until the mixture is about 2cm thick.

3. Sprinkle the remaining ingredients on top and freeze for a couple of hours, or until frozen solid.

4. Remove from the freezer and, using a sharp knife, cut into rough pieces. Serve immediately and keep the rest in freezer bags (in the freezer) until needed.

  • 2 cups (500ml) plain full-cream yoghurt
  • 1 tsp. (5ml) vanilla paste
  • Small handful or raspberries
  • Small handful of blueberries
  • 50g pistachio nuts; roughly chopped
  • 50g toasted coconut flakes
  • Edible flowers, for garnish (optional)
