Vegan Black Bean Burgers with Spicy Slaw, Brinjals & Baby Marrows

Find out just how incredibly tasty a vegan burger can be with this super recipe which uses Simple Truth Black Bean Patties. They’re packed with protein and are best paired with vitamin-rich brinjals and baby marrow.

Directions

1. Slice and grill rolls until golden and set aside.

2. Heat a little extra oil in a non-stick pan and grill patties until cooked and heated through. Set aside.

3. Season baby marrows and brinjal, and drizzle with olive oil before grilling, until cooked through.

4. Mix together coleslaw with chipotle, mayonnaise, lemon juice and radishes.

5. Serve rolls filled with vegan patties, spicy coleslaw, grilled brinjal, baby marrow, lettuce and tomato with an extra dollop of chipotle sauce.

  • 4 – 6 baby marrows; sliced
  • 1 brinjal; sliced and seasoned
  • ½ packet coleslaw
  • ½ cup (125 ml) Simple Truth Mayonnaise
  • 3 tbsp. (45 ml) Simple Truth Chipotle Sauce
  • Juice of ½ lemon
  • 4 – 6 radishes; finely sliced
  • Lettuce
  • 1 tomato; sliced
