Directions

1. In a small bowl, combine the gelatine and 8 tbsp. (120ml) of Champagne. Set aside.

2. Spray an 8cm x 8cm pan with non-stick spray, then sprinkle icing sugar all over the pan, covering it completely.

3. In a small saucepan, heat the remaining Champagne and granulated sugar over medium heat. Stir constantly until the sugar has dissolved and the mixture becomes bubbly (about 3 to 4 minutes).

4. Add the gelatine mixture to the saucepan, whisking continuously. Bring the mixture to a boil, then remove from heat.

5. Pour the mixture into the bowl of an electric mixer fitted with a whisk attachment. Let it sit and slightly cool.

6. Add vanilla extract and salt to the mixture. Beat on medium-high speed for 10 to 15 minutes until it becomes white, glossy, shiny and thick.

7. Spread the mixture evenly in the prepared 8cm x 8cm pan. Optional: Sprinkle icing sugar on top.

8. Allow the mixture to sit at room temperature for about 4 hours or overnight to set.

9. Remove the marshmallows from the pan as a single square and cut it into pieces.

10. Optional: Coat the marshmallows with icing sugar.

11. Dip one edge of each marshmallow into the melted chocolate and place them on parchment paper to set.

12.Let the chocolate cool and slightly firm up until it fully sets.

13. Put each marshmallow in between two biscuits.

14. Store the Champagne S'mores in a sealed container. They will last for a few days.

  • 1 tsp. (5ml) vanilla extract

  • Icing sugar for sprinkling
  • 250g of high-quality dark chocolate; melted
