Directions

1. Cut the top off the garlic bulb, drizzle with olive oil, season with salt and pepper then wrap in foil and place in the air fryer or oven to roast for 30 minutes until tender.

2. In a bowl, combine the butter and mayonnaise, season with salt and pepper, then squeeze in the soft roasted garlic, discarding the skins, and mix well.

3. Season the cucumber with salt, sugar, chilli and vinegar then toss to coat evenly.

4. Cook the schnitzels in the air fryer or oven until golden and cooked through.

5. Cut ciabatta in half horizontally, then spread both halves with the garlic and place under the grill in the oven to bubble and toast the bread.

6. Top bread with the cheese slices, then place back under the grill to melt.

7. Layer the tomatoes onto the bottom half of the sandwich, season to taste, then add the schnitzel and finally the cucumbers before adding with the top half of the sandwich.

8. Slice sandwich into desired portions.

Ingredients

  • 2 x chicken schnitzels
  • 1 plain ciabatta loaf
  • 6 slices cheddar cheese
  • 1 tomato; thinly sliced

 

For the Garlic Spread:

  • 1 garlic bulb
  • 1 tbsp. olive oil
  • Salt and pepper, to taste
  • 100g softened butter
  • 2 tbsp. mayonnaise

 

For the Seasoned Cucumber:

  • ½ cucumber; sliced
  • ½ tsp. salt
  • 1 tbsp. sugar
  • Chopped chilli, to taste
  • 1 tbsp. apple cider vinegar
