Directions

1. Heat oil in a pot, then add onions and sauté until softened and brown around the edges.

2. Add garlic and ginger paste, curry powder and spices, then stir to coat the onions in the spices and toast lightly.

3. Add a splash of the vegetable stock and continue to sauté over low heat for a minute, allowing the spices to cook.

4. Add pureed tomatoes, then cover and simmer for 5 minutes until thickened.

5. Add remaining stock and potatoes, then simmer for 15 minutes or until the potatoes are cooked through.

6. Add drained butter beans and cream, season to taste, cover, and simmer for 10 minutes.

7. Stir in fresh chopped coriander to serve.

  • 1 tbsp. garlic and ginger paste
  • 2 tbsp. curry powder
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • ½ tsp. turmeric
  • ½ tsp. chilli powder
  • ½ tsp. ground cardamom
  • ½ tsp. ground allspice
  • 2 cups vegetable stock
  • 2 tomatoes; pureed
  • 1 large potato; peeled and diced 
  • 2 tins butter beans
  • ½ cup fresh cream (or coconut milk)
  • Salt and pepper; to taste
  • Chopped fresh coriander
