Creamy Pasta Salad by Zola Nene

Description

Chef Zola has an easy-to-make Creamy Pasta Salad recipe that’s just perfect all on its own. There’ll be more than enough for seconds if you’re alone, and plenty if you’ve got a few guests. 

Directions

1. Cook the pasta as per instructions on the packet.

2. Mix together the mayonnaise, cottage cheese, mustard and onion marmalade in a large salad bowl until well combined.

3. Add the cooked pasta, cucumber, onion, carrot, tomatoes and chicken.

4. Season to taste with salt and pepper, then toss together well until all the ingredients are coated in the creamy dressing.

  • ½ cup mayonnaise
  • ¼ cup smooth cottage cheese
  • 1 tsp. Dijon mustard
  • 1 tbsp. heaped onion marmalade
  • Salt & pepper, to taste
  • 250 g pasta; cooked, drained and cooled
  • 2 mini cucumbers; diced
  • ½ small onion; finely chopped
  • 1 carrot; diced
  • 125 g cherry tomatoes; chopped
  • ¼ rotisserie chicken; shredded (optional)
