Directions

1. Heat olive oil in a large pot, add garlic and ginger paste and the Cauliflower & Butterbean Soup Mix, then sauté until the veggies soften. 

2 Add curry powder and sauté for a minute. 

3. Add half the stock and coconut milk, then simmer for 15 minutes or until veggies have softened. 

4. Add remaining stock then blend soup until smooth. 

5. Serve with a drizzle of extra coconut milk and a sprinkling of croutons.

  • 2 tbsp. curry powder
  • 2 cups vegetable stock
  • 1 tin coconut milk
