Directions

1. Turn the chicken breast side down, then, using a strong pair of kitchen scissors, cut through the rib bones along both sides of the backbone to remove (you can save it for making stock).

2. Turn the chicken breast side up, then push down firmly on the breastbone to crack it and flatten the chicken.

3. Place the chicken into a roasting dish, season with salt and pepper, then pour a generous amount of basting sauce over the chicken, rubbing it to coat well. Leave to marinate for a couple of hours if possible.

4. Roast in a preheated oven at 200ºC for one hour until the chicken is cooked through, baste with more sauce halfway through cooking.

You can also cook the chicken over medium coals on the braai.
